KOJA Banana and Date Loaf

 

Free from refined sugar and dairy. 

 

WHAT YOU NEED:

-3 Ripe Bananas, mashed

-2 Organic Free-Range Eggs

-4 Tbs Raw Honey or Organic Maple Syrup

-100ml Coconut Oil or Macadamia Nut Oil

-1 tsp Ground Cinnamon

-150g Desiccated Coconut

-75g Wholemeal Self-raising Flour

-50g Almond Meal

-6 Medjool dates, chopped

-100g KOJA Almond & Berry

  

HOW TO:

1. Preheat oven to 160° C

2. Combine the bananas with lightly whisked eggs, honey, oil of your choice and cinnamon

3. Add coconut, sifted flour, almond meal and combine well.

4. Finally fold in the Medjool dates and KOJA and pour mixture into a medium loaf tin, lined with baking paper.

5. Bake for about 35 minutes. Check the centre with a skewer. Cool on a wire rack.

This recipe can also be divided into 8 mini loaves- great for lunch boxes or on the go. Just reduce the baking time by about 10 minutes.
