KOJA Dark Choc Chip Oat Bar Banana Bread

It’s the perfect recipe for the busy transition into spring, quick to make and even more quickly enjoyed. We already know this flavour combination is a big hit with you, so we thought we’d have some fun and see what we could create!

Prep time: 15 minutes   |    Bake time: 60 minutes   |    Yield: 1 loaf 

What you need:
- 2 Mixing bowls
- 1 Loaf pan
- 1 Mixing spoon 
- 1 Wire rack 

Ingredients:
- 1/2 cup rolled oats
- 1/4 cup dark chocolate chips (or chopped dark chocolate)
- 3 ripe bananas, mashed
- 1/4 cup melted butter (or 1/4 cup Greek yogurt for less fat)
- 1/4 cup maple syrup or honey (for natural sweetness)
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon

Instructions:
1. Preheat Oven: Preheat the oven to 175°C and grease a loaf pan.
2. Mix Wet Ingredients: In a large bowl, mix the mashed bananas, melted butter (or Greek yogurt), maple syrup or honey, eggs, and vanilla extract.
3. Combine Dry Ingredients: In another bowl, mix the whole wheat flour, baking soda, salt, and cinnamon.
4. Combine Wet and Dry: Add the dry ingredients to the wet ingredients and fold in the rolled oats and dark chocolate chips.
5. Bake: Pour the batter into the loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the centre comes out clean.
6. Cool: Let the banana bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
